Best practices for View in MVC pattern

What kind of options("best practices") we have to create views in popular pattern Model-View-Controller using PHP language?

Yes, I know, that for my choice exist different template engines or I simply can send raw data between server and client.

For example, I want to develop eshop. What should be the best choice to create Views? Maybe templates or html pages with AJAX data btw server-client?
