How to decode the gmail INBOX IOS app traffic?

I want to extract all information from the web traffic of Gmail INBOX IOS app for my research work and want to prepare the log file for that. I have used the Fiddler tool to get the web traffic.

So please is it any other way to get all the information. From fiddler or any other web debugging tool. Maybe the inbox is using some encoding technique, so all information is not able to view and not able to extract all information. We can see the text that is used in the mail but not able to retrieve info in my python code. Since there is no fix delimiter on which all information I can extract.
