Using Lua Eclipse LDT to run a Web Server

I am trying to use a lua IDE specifically the eclipse Lua Development tools (http://ift.tt/2iWsono) to run a web server. I have a few web enable micro-controllers and want to have them send environmental test data to the server to store the information for easy data analysis. I have been unsuccessful as of yet to make eclipse work like a web server using lua. If anyone could point me in the correct direction that would be great!!
