Best tool to build a small CRUD application

At work, I am building a small CRUD app that just has one table with some text-based fields populated from a form and stored in a MongoDB schema.

I am looking for the best solution (language and/or framework) to do this in the most lightweight and simple way possible. I was thinking about using PHP but I have to admit, I'm not a fan.
