How to create a web chat from scratch?

I want to create a web chat application (like whatsapp web, telegram...) to be single page app and progressive web app, what knowledge do i need to do it the right way? I am planning to use: React, react router, nodejs, socket.io, mongodb

For security i have also seen "Auth0".

I have in mind "XMPP", "Advances Message Queuing Protocol", End-to-End encryption (¿AES?), Redis(cache), Redux (I'm not clear about its purpose)

But from these last things I do not know what can i use, what should i use and how to organice all for the project.
