What type of websites do employers want to see?

I don't know if this is the place to ask this question. But, I'm trying to develop some websites that I can use as portfolio material to get hired as a web developer. The only problem is that I don't actually know what type of website I should try to create. Right now, I am creating a website that has to do with chinese freight services because I have seen a request from this company on a web design contest site. But it is rather boring, so I am wondering if I can just create a website that is based on my interests? Will that be bad portfolio material to employers? What type of content are they looking for when they see a web developers portfolio material.
