How do I structure my php code?

Okey, so I am wondering how I should go about creating my php project. I know how to use jQuery to call php files and retrive data. But what if I want to call specific functions within the php files from javascript? The only soulution I have right now is that I create a new PHP file for every function I would want to call from javascript.
