What tools can I use to sniff packets between my client and my wifi? [on hold]

I'm trying to sniff every packets that my iphone application makes between my wifi before sending it to the actual host server.

In other words, I'm trying to sniff every packets that instagram client makes with my wifi before wifi sends that packet to the instagram server side. I'm trying to intercept that packet and send it to instagram myself. I am having trouble figuring the tools I can use to make it happen. I do know wireshark can be used to open the packet file, but what tool can I use to actually track those packets?
